The cheese course at Element 47 in The Little Nell is excellent, featuring Colorado-made cheeses and all the proper accompaniments. Local cheeses include Avalanche goat cheddar, soft Mouco Camembert made from cow milk and Avalanche Robiola, a soft and earthy raw goat milk cheese. Choose three or five cheeses and they’ll arrive along with small pieces of toasted bread, honey made on Aspen Mountain candied cashews and peach preserves from Pallisade, Colorado. The entire arrangement is served on a roomy square plate and is intended for sharing at the table. But no one will fault you if you want to enjoy your Element 47 cheese course on your own.
