Executive chef Matt Zubrod has a food philosophy that’s focused on featuring the best local and seasonal produce and ingredients in his menu at Element 47. That extends to highlighting area farmers, as well as sustainable seafood, organic vegetables and artisan cheeses. This is illustrated in the Element 47 menu, where the cuisine is decidedly Coloradan with global touches. In fact, Colorado agriculture is the focal point of the menu, with Wagyu beef from the local Emma Farms Cattle Company, goat cheese from Avalanche Cheese Company in the neighboring town of Basalt, as well as honey produced on Aspen Mountain. Seasonal vegetables and fruit, as well as locally grown herbs, feature prominently in Zubrod’s dishes. The menu at Element 47 may change as often as weekly — or even daily — depending on what’s freshest from the market that morning.
