The food presentation at Element 47 in The Little Nell is, in a word, gorgeous. Oversized white plates — sometimes round, sometimes square — serve as canvases for executive chef Matt Zubrod’s works of art. In particular, the seasonal vegetable plate is arranged so creatively, with so much color and texture, and veggies of varying heights placed next to one another that you might hesitate to disturb the tableau. Similarly, the presentation of food is surprising, such as braised short ribs and roasted pork medallions arranged in a semi-circle and accompanied by vegetables on one side of a large round plate. Sauces and garnishes are placed with flair, for sophisticated, eye-catching and colorful presentation at Aspen’s Element 47.
