With the wide variety of food and beverages at Fairmont Banff Springs Hotel, it’s difficult to narrow the top picks down to a small selection, but there are certainly some standout dishes and drinks to keep in mind.
Get into the German spirit at Walhaus Pub with Das Boot beer that, unsurprisingly, is exactly what it sounds like. Choose your drink and prepare to send it down the hatch as it is delivered to you in a large boot-shaped vessel made of glass. You’ll need at least a bit of food to compliment it, however, so opt for a jumbo bratwurst on a pretzel bun with sauerkraut, red onion and fresh mustard.
The Banffshire Club features a delicious option of the Prairie Heritage Angus Beef Tartar appetizer, served with radish, watercress, jerky, mustard and shallot crumble. Or, if you’re looking for a lighter (and healthier) option, try the roasted beet risotto with green asparagus, beet greens, goat cheese, heirloom carrots, roasted beets and basil oil at the Bow Valley Grill.
The thirsty travel should head to the Rundle Lounge, the hotel’s main bar option, and order the Cornelius Caesar. This cocktail, made with gin, vodka or tequila, honors the hotel’s founder (William Cornelius Van Horne) with fresh Serrano peppers, cucumber and olive juice.
