The menu at Trump International Hotel & Chicago’s signature restaurant, Sixteen, changes daily; and because of that it makes it hard to determine a signature dish, as there are always new ones being crafted by our executive chef. One favorite though, that makes appearances throughout the year is the pork belly and tenderloin. Cooked to perfection, it’s plated and then covered with a creamy polenta, roasted peach, mustard greens and topped off with a bourbon espuma.
Otherwise, the best dinner option at Sixteen is to do the chef’s eight course blind tasting menu. Comprised of eight separate courses prepared by the chef that very moment, it is an incredible culinary journey. Start with an amuse bouche before enjoying various appetizers, a fish course followed by a meat course before topping off with incredible desserts.
The majestic views of the city further enhance these dishes. Perfectly framing the city, Lake Michigan and the Chicago River, the restaurant’s 24-foot floor-to-ceiling windows bring the city’s beauty inside.
