Menus usually change with the seasons at The Broadmoor’s swankier dining spots, including the famed Forbes Travel Guide Five-Star Penrose Room. The hotel’s executive chef Bertrand Bouquin does make an exception, however, for the Caesar salad — prepared tableside the old-fashioned way, coddled egg and all, it remains a permanent fixture on the menu.
