Cocktail connoisseurs should know that Summit’s bar is arguably The Broadmoor’s best. Head bartender Robert Leavey and his progressive team of mixologists specialize in the unexpected, combining premium spirits — many from Colorado, which is experiencing a micro-distillery boom — with fresh fruit purées and intriguing ingredients such as Li Hing Mui powder or white balsamic vinegar. Of course, they can make a mean Manhattan too. Needless to say, many of the craft beers on offer are Colorado-made, the state being a renowned brewing hub. The wine program, meanwhile, is decidedly eclectic, focusing on boutique wineries from around the world. Organic, biodynamic and otherwise sustainable labels get special emphasis.
Summit has a bar and lounge area with a stunning 14-foot wine turret as the focal point. A bar menu is offered during “Summit Social Hours” from 5 to 6:30 p.m. From 9 to 10 p.m., small plate, dessert, cocktail, wine and beer specials are offered.
