Summit’s dessert selection changes frequently, but its signature style is unwavering. Elegant and intricate but not frilly thanks to their fresh seasonal bent, sweet dishes range from the likes of a caramel tart with apricot-lavender marmalade and chocolate sorbet to chilled peach soup — Colorado peaches are famed far and wide — with hazelnut pound cake, nougatine whipped cream and basil gelée (savory herbs are often sprinkled throughout the dessert menu). On the simpler side, there are ever-changing assortments of unusual ice cream and sorbet — such as pinot noir or spiced cherry port — as well as a fine international cheese selection.
The Summit desserts change seasonally and always include a selection of homemade ice creams and sorbets as well as chocolate and fruit desserts, cakes, tarts and pastries, all with a French inspiration.
