Chef Dean Fearing’s eponymous eatery at The Ritz-Carlton, Dallas is inspired by his grandmothers’ love of Southern food and barbecue. Fearing has imbued his dishes with Texas taste enhancers like peppers, dried chiles, jicama and cilantro in signature dishes like the famous tortilla soup, barbecued shrimp taco and rib-eye mopped over live mesquite.
