You’ll find a handsome bar on your way to the host stand at Blue Hill at Stone Barns where you can enjoy a drink or a full dinner if you aren’t able to snag a table in the main dining room. The restaurant’s bar program reflects its farm-to-table philosophy, with many flavorings and spirits — including a gin and an emmer whiskey — made from grain grown on the property in Pocantico Hills. In addition to the handful of high-back chairs that surround the bar itself, you’ll also find comfortable arm chairs and stools where you can enjoy such tipples as the Herbal Elixir, a bright green blend of gin, Chartreuse, with the flavors of green apple, celery and tarragon or the Preserved Cherry Swizzle, made with El Dorado rum, long peppers, lime juice and preserved cherries. A full range of spirits is available, as is an international selection of wine by the glass, but the specialty cocktails truly allow you to see how chef Dan Barber’s culinary philosophy influences the Forbes Travel Guide Four-Star restaurant's bar program.
