The main dining room at Blue Hill at Stone Barns is lined with windows, offering you lovely views of the adjacent farmland and gardens. Just outside the restaurant lies the verdant tisane garden, where the restaurant’s chefs and farmers cultivate herbs and roots like sarsaparilla, lemon verbena and ginger. They're used to make caffeine-free, herbal infusions you can sip after dinner without worrying about lying awake later.
