If you do opt for cheese, at the end of your meal you’ll be treated to two cheeses with accompanying garnishes and a small piece of bread. Like everything else served at the farm-to-table restaurant, the cheese offerings change according to what’s in season. On a recent visit, the cheese course included a soft raw milk’s cheese from Vermont paired with a green apple gelée and a small wedge of pretzel bread, and an ashed sheep’s milk cheese accompanied by pickled pear compote, all served on an elegant slate plate.
