One popular item is the first-course game bird confit and Bass Lake chèvre ravioli, served with red grapes, caramelized onions, hazelnut dust and citrus foam. The game bird varies based on availability, so you could end up with a guinea hen or duck. Another option is the controversial but irresistible seared sea scallop and Hudson Valley foie gras, served with long-stem artichokes, truffle and orange vinaigrette. An additional signature dish is the ancho-chile and coffee-braised beef short ribs, served with a sweet corn and chickpea empanada, cilantro crème fraîche and natural reduction sauce. It started as part of the chef’s tasting menu but became so popular, that it’s now available à la carte.
