Mizumi at Wynn Las Vegas is the perfect spot for vegetarians to enjoy an extensive menu of appetizers and main dishes for every palate. Several of the classic rolls are vegan choices, including the cucumber roll, pickle roll and vegetable roll. (For those who eat fish combined with veggies, the options are truly endless.) The miso soup is made with tofu and there are several Japanese noodle dishes that fit the bill, including udon noodles served with Japanese mushrooms, scallions and mitsuba leaves in a soy soup.
If you like your vegetables fried, there’s a great vegetable tempura. Those who want a low-cal bite will enjoy the cucumber and seaweed salad, Japanese mushroom salad or Mizumi mixed green salad. Even the robatayaki can be ordered vegan. Choices for these skewers include eggplant with yuzu miso, shishito peppers, eryngii mushrooms or shiitake mushrooms.
