Wine guru Holly Smith is the sommelier at Lautrec and the mastermind behind the sophisticated wine pairings offered at this Forbes Travel Guide Five-Star restaurant.
For an additional cost, the prix-fixe and Chef’s Tasting menus both have optional wine pairings created by Smith, with assistance from chef de cuisine Kristin Butterworth. When selecting wines for a new dish on Butterworth's menu, Smith and Butterworth each taste it separately and select a wine they feel best suits the flavors — and they’re so familiar with each other that they claim to almost always pick the exact same wine which, of course, makes things easy.
Smith also serves as director of wine and spirits for the entire Nemacolin Woodlands Resort and leads wine classes at the resort’s Academie du Vin, a recommended activity for those wishing to further draw on Smith’s wine wisdom.
