The culinary creations at Jade Dragon are whipped up and crafted by Tam Kwok Fung, the executive chef of the restaurant. Fung formerly worked at Forbes Travel Guide Five-Star Altira Macau’s restaurant, Ying, before he decided to help launch Jade Dragon at Crown Towers Macau. Tam Kwok Fung is no stranger to the high-end culinary scene — he brings more than 30 years of Cantonese cooking experience to the kitchen, having worked at luxury hotels around the world such as The Peninsula Bangkok and restaurants in Hong Kong and Thailand.
