Dallas, a Memphis native, is very gregarious and interested in not just keeping hotel guests happy, but also in reviving the local dining scene. After training with four James Beard Award-winning chefs in some of the finest restaurants in Philadelphia and Seattle, Dallas came to Chez Philippe to return the cuisine to its traditional French roots (but with a Southern twist). Dallas is only the fourth chef in the 29-year history of the Forbes Travel Guide Four-Star restaurant in The Peabody Memphis, where he uses seasonal, sustainable and locally sourced food.
