The best things to order at Chez Philippe vary by season. A shifting menu means every meal will be fresh, with many of the ingredients coming directly from Chef Jason Dallas’ backyard or one of the waitstaff’s. There are no wrong answers when choosing off the French — with a Southern twist — menu at this Forbes Travel Guide Four-Star restaurant.
1. Smoked quail rocket salad. A favorite of ours on the summer menu is the salad with the chef’s garden baby arugula, a soft, poached quail egg and sherry vinaigrette.
2. Roasted squab breast. We also love this delicate dish with Roquefort blue cheese grits and squab confit and huckleberry sauce.
3. Venison loin. The tender meat is served with sous-vide baby fennel, celery root fondue and blackberry sauce.
4. Seared scallops. This nice seafood dish is served with zucchini and squash, braised leeks and champagne beurre blanc.
Newman Farm porkchop. On the fall menu, we love this dish, complete with heirloom pumpkin risotto with sage and bacon.
