The menu at Capitol Grille, the Four-Star restaurant located inside the Forbes Travel Guide Five-Star Hermitage Hotel, changes every season — so it’s not so much about signature dishes for dinner but seasonal ones rooted in Southern culture. The produce used in all of the restaurant’s seasonally planned dishes come from the hotel’s own farm, which is located on land willed to The Land Trust for Tennessee in 2006. The Hermitage Hotel has created a substantial period garden there using sustainable practices. Work at the farm has grown to include a herd of cattle as well as cultivation of bees. The beef is aged for 21 days before it’s offered at the restaurant, so an order of the dry-aged beef is probably a good bet but anything you order is bound to be pure Southern comfort.
