You may recognize chef Michael White from his other successful restaurants, including Al Molo in Hong Kong and Marea in New York City, and White and his hospitality brand, Altamarea Group, opened Ai Fiori in November 2010. White boasts an impressive culinary background, from formal training at the Kendall College School of Culinary Arts in Chicago to stints abroad in Italy and France. In 2001, White served as the chef de cuisine at the highly lauded Spiaggia restaurant in Chicago, and eventually penned a cookbook, Fiamma: The Essence of Contemporary Italian Cooking, from his time as executive chef at Fiamma Osteria.
