As is expected of a luxury fine dining restaurant, the chef and pastry chef at Marea both send out gifts at the beginning and end of the meal. An amuse bouche, always changing depending on the chef’s mood and creative inspiration, arrives before your first course and it can be promised that it will be interesting and exciting. Ours recently was served on a tiny silver spoon with a single green leaf delicately placed on the edge. At the end of the meal at the Forbes Travel Guide Four-Star restaurant, the pastry chef sent out petit fours that will typically include a gelee of some sort (ours recently was blood orange), two chocolates and a puff pastry.
