While the staff at Per Se knows plenty about wine, the head sommelier will likely make recommendations for you. Michel Couvreux, the head sommelier at the New York restaurant, manages the wine program and trains the staff. Couvreux joined Per Se in 2009 after working in high-profile restaurants in Paris and New York including L’Arpége, Guy Savoy, Le Bernardin and Cru.
The Forbes Travel Guide Five-Star restaurant’s wine list includes a selection of half-bottles as well as several good wines by the glass, including champagnes ranging from a domestic Schramsberg to a 2000 Bollinger; reds like a 2005 Chevalier de Lascombes and 2007 Screaming Eagle Cabernet Sauvignon; and whites, ranging from a Selbach-Oster Riesling to a Grieve Sauvignon Blanc.
