The two tasting menus offered at Per Se are rather special -and they change every night — but no, there are no Burger Tuesdays or any other kind of nightly special. The Forbes Travel Guide Five-Star restaurant offers two nine-course tasting menus every day: a chef's menu and a "tasting of vegetables." The menus are based off the best seasonal ingredients and the chef's most recent ideas.
At this point, the restaurant can't not serve some of the signature dishes chef and owner Thomas Keller became famous for, including the "oysters and pearls," an elegant dish featuring a sabayon of pearl tapioca with Island Creek oysters and Sterling white sturgeon caviar. It's sort of like that hit song that a singer can't get away from. A meal at this New York restaurant also always starts with a salmon tartare cornet, made up of a small black sesame cone filled with crème fraîche and salmon tartare. It's just too popular at this point to leave out of the set.
