At Per Se, like most Forbes Travel Guide Five-Star restaurants, you’ll find that all the details are exceptionally well thought out. That includes the bread basket, which comes filled with four housemade breads, including small baguettes, rolls and pretzel rolls, and is accompanied by both salted and unsalted butter. But not just any butter will do — as with all the products procured for the restaurant, you get the feeling that they’ve searched the Earth to find the best butter (it comes from the Straus Family Creamery in Northern California and the Animal Farm in Vermont). Just be sure not to fill up on the bread basket, because there’s lots more to come. Other starters to a meal at the New York restaurant include chef Thomas Keller’s famous "oysters and pearls," a sabayon of pearl tapioca with Island Creek oysters and Sterling white sturgeon caviar, as well as the salmon tartare cornet, a small black sesame cone filled with crème fraîche and salmon tartare. And that’s just the beginning.
