It can be tough to get a table at the Per Se in the first place — the restaurant accepts reservations one month prior to the calendar date and bookings often fill up fast. So, unfortunately, you’re going to be charged a fee if you don’t give them at least three day’s cancellation notice. The Forbes Travel Guide Five-Star restaurant’s staff calls to confirm every reservation three days before; if you cancel after that time, you’ll be charged a $175 penalty per person. Blow off your reservation completely, and you’ll be charged the same fee.
To cancel, call Per Se between 10 a.m. and 6 p.m. local time. You can also cancel online through OpenTable. Note that Per Se requires reservations for its main dining room. However, tables are up for grabs in the salon on a first-come, first-served basis. The salon is a good option for a drink or meal if you’re not sure of your schedule.
