Vegetarians certainly won’t be bored when dining at New York’s Per Se — in fact, the tasting of vegetables here is one of our favorite things to eat anywhere. Chef and owner Thomas Keller is known for using the best seasonal ingredients, so much so that eating pea soup here will have you smiling from ear to ear. The Forbes Travel Guide Five-Star restaurant’s daily nine-course “tasting of vegetables” menu is mostly vegetarian (and can be made completely meat-free on request). The menu, which changes daily based on seasonality, might include dishes such as smoked ricotta gnudi with English walnuts, celery branch salad and shaved black winter truffle; and a coddled egg served with fennel, olives and a crystallized eggplant chip.
Although it’s a bit more difficult, a vegan menu can also be arranged with advance notice. Per Se’s staff is dedicated to providing the same experience to all guests regardless of dietary restrictions, so don’t hesitate to ask.
