You shouldn’t have to wait for a table at Per Se if you’ve made a reservation, but the restaurant’s salon still makes a great place to enjoy a cocktail or glass of champagne. We recommend snagging a spot on the two-person sofa at the end of the salon, directly in front of the window overlooking Columbus Circle and Central Park South. It’s an extraordinary place to have a glass of champagne and to test chef and owner Thomas Keller’s signature canapés, such as the gougères and salmon tartare cornet.
