While Glitretind Restaurant's menu primarily offers seafood and chops, there are a few vegetarian options for lunch and dinner. At dinner at the Forbes Travel Guide Four-Star restaurant, there are always salad options for the first course, such as the colorful baby potato and beet salad served with smoked cipollini onion vinaigrette, a baby romaine panzanella or the Farmer Jones red greens made with pickled blueberries, hazelnut relish, local goat cheese panna cotta and blueberry vinaigrette. On a recent visit, there was one vegetarian entrée — the pinot noir risotto served with Utah feta cheese and olive oil-braised kohlrabi.
For lunch at the luxury Park City restaurant, you’ll find some salads and sandwiches without meat, such as the grilled asparagus and mushroom on ciabatta with Utah black pepper goat cheese, roasted yellow pepper and avocado. The kitchen can also adjust some dishes by skipping the meat, such as the Norwegian shrimp chopped salad made with romaine, radicchio, avocado, boiled egg, black pepper croutons and creamy dill vinaigrette (just hold the shrimp).
We feature seasonal vegetarian soups, a number of starter courses including the Stein’s Red Greens. We always feature a vegetarian entree and can modify several other dishes to make them vegetarian or vegan such as our port wine risotto with braised kohlrabi.
