The menu at The Fearrington House Restaurant changes frequently, allowing executive chef Colin Bedford to capture the best of what’s seasonal and local — a food philosophy the British-born chef is passionate about. The prix-fixe menu changes weekly, highlighting ingredients that are at their peak freshness. In the spring, for example, Bedford is likely to incorporate English peas. Soon after, soft-shell crabs make an appearance on the menu (a customer favorite at the Forbes Travel Guide Five-Star restaurant). As fall arrives, pork, butternut squash and mulled wine sauce are incorporated into dishes to reflect the new season.
