Inspired by kaiseki, the Japanese art of multicourse haute cuisine, this elevated restaurant on board Silver Nova seeks to deliver a more intimate fine-dining experience at sea. 

Simplicity reigns supreme in this floating dining room, where minimalist decor and understated ceramics allow artfully presented sushi and sashimi to shine. True to its name and tradition, Kaiseki’s menu emphasizes traditional preparation and skilled technique, with offerings that rotate frequently based on seasonality and freshness. 

In addition to sushi and sashimi, there’s also a well-rounded selection of Japanese classics to explore, from freshly simmered ramen and flaky miso black cod to the sizzling theatrics of teppanyaki.

  • As a proudly Japanese concept, it’s no surprise that the omakase shines. Changing according to the chef’s preference, this evening tasting menu typically spans around six courses, with highlights that may include steamed egg custard, chopped shrimp with caviar and wagyu beef steak with grilled lobster tail basted in yuzu butter. There’s also an à la carte menu, should you prefer to chart your own culinary adventure.
  • Kaiseki offers two types of seating: standard tables and seats surrounding the teppan grill. Those lucky enough to secure one of the coveted 14 counter spots (dinner reservations are essential) are rewarded with a front-row view of the chefs at work — many of whom are happy to discuss their craft if you’re curious.
  • The Japanese restaurant’s complimentary, reservation-free lunch is a more relaxed affair, with a menu built around casual crowd-pleasers such as fresh sashimi, nigiri and rolls, steamed bao buns and ramen bowls.
  • The interior design draws from Japanese minimalism and Zen with subtle nods to nature — think stone, soft wood and large sculptural wall installations that recall geological fragments or abstract landscapes.
  • Constant action animates the dining room, preventing Kaiseki from feeling overly formal. Servers glide between tables while the dexterous teppanyaki chefs bounce eggs, and sushi chefs shape each piece with focused efficiency.

  • Dinner at Kaiseki is in high demand, so reservations are strongly recommended. Cruise guests should also note the additional surcharge for dinner service on Silver Nova.
  • Kaiseki has an elegant casual dress code, which translates to trousers, button-up shirts and dresses. A jacket is optional but recommended.
  • Vegetarians will find a few delicious options on the menu, so there’s no need to skip this restaurant if someone in your party doesn’t eat meat.
