Canoe is a stunning venue in which to experience creative, satisfying regional Canadian cuisine. While dazzling ingredients tend to be sourced from wonderful local producers, many organic, the kitchen borrows flavors and techniques from the world at large, including Asia, France and the American South. The end product is inventive food and an equally original room. The five-course tasting menu is a rollercoaster of succulent flavors including tenderloin tartare, broiled Sablefish and caramelized honey crisp apple almond cake. The wine list is equally indulgent.
