A stay at Severin*s Resort & Spa feels a bit like stepping back in time. Located in Keitum, a former whaling captains’ village of thatched houses, stone walls and tree-lined lanes, the resort continues the German island’s traditional architecture with a sprawling, S-shaped building set among the property’s verdancy. Nearly 54,000 square feet of thatch covers the main structure, while rooms and suites bring the same natural palette of wood and stone indoors.

The sense of place continues at the table, where Tipken’s by Nils Henkel focuses on seasonal, nature-driven cuisine and Hoog gives local dishes such as Keitum fish soup and freshly caught cod with fennel risotto a contemporary twist. The 21,500-square-foot spa draws inspiration from Sylt’s dunes, heathland, beach and sea, with a glass-roofed pool, hammam and saunas.
