The food at The Ocean Room is based on fresh, local ingredients and the dessert menu follows suit. Pastry chef Lawrence Brubaker creates a dessert menu that changes with the seasons — there is no singular signature dish. But that doesn’t mean there isn’t continuity from menu to menu — there is always a chocolate dessert, a seasonal sorbet, a frozen dessert other than sorbet and one seasonal fruity dish (think strawberry white chocolate mousse with strawberry jam or lavender crème fraiche sherbet in late spring and early summer). While the culinary team has discussed creating a signature dish (the former was banana pudding), they have yet to decide on one that best represents the Forbes Travel Guide Four-Star restaurant.
