Aurora Anguilla Resort & Golf Club debuted in late 2021 following an extensive renovation, transforming the former CuisinArt Golf Resort & Spa into an ultra-luxe retreat. The 300-acre resort boasts 178 bright and airy rooms featuring natural materials and splashes of thoughtfully curated color to mimic the surrounding landscape. Seven restaurants and bars, a sumptuous spa and a soon-to-debut oceanfront golf course are among the hotel’s many virtues, but the pièce de résistance is a fleet of private jets that makes traveling to this island paradise a breeze.

  • For casual, but no less delicious beachside fare, head to Breezes, where East Coast classics (and cocktails) get a Caribbean twist. Dig into a jerk burger sandwiched between johnnycakes while sipping on a refreshing ginger-peach cooler spiked with Plantation Grande Reserve 5-year Rum.
  • Italian-inspired Marella whips up seafood-focused pasta dishes with an Anguillan twist (think basil gnocchetti with saltfish and pork belly or spiny lobster with saffron risotto), while classic steakhouse D Richard’s turns out juicy cuts and fine wines inside the Aurora International Golf Club.
