After entering through the hotel’s grand lobby, glide down a set of stairs to the sophisticated restaurant where you’ll find several distinct sections: a romantic wine bar, an intimate main dining room and an energetic open kitchen.

Naturally, steak is the star of the show, with a menu featuring USDA beef, Australian wagyu, Japanese A5 Hida wagyu (a highly coveted breed) and a selection of hormone- and antibiotic-free cuts — all prepared to perfection on a beautiful copper charcoal grill, which is the first and only such grill in Hong Kong. There’s also an extensive list of seafood, including an immense 35-ounce Boston lobster, super jumbo king prawns and a meaty crab cake appetizer.

• Succulent cuts range from a nine-ounce New York strip to a 32-ounce Grade 7 Australian wagyu tomahawk.

• The devil is certainly in the details here, where you will get to choose from eight types of sea salt, a dozen mustards and even 10 different specially curated steak knives, from a classic wood-handled Nevada utensil to a Porsche-designed chrome option from Germany.

• A signature offering, the salad bar is a no-brainer appetizer to complement your dinner. Everything from smoked salmon and charcuterie, cheese and countless types of olive oils and balsamic vinegars will be yours for the feasting.

• Ask about the specials, as the restaurant offers premium cuts from various parts of the world featured throughout the year — be it a 45-day dry-aged steak, such as a U.S. porterhouse or a bone-in strip, or even special beef selections from artisan butchers in France and Argentina.

• If you’re not into sweets, a great way to finish off your meal here is with a digestif sampler: four tasting-size pours of either Macallan single-malt whiskies, grappa or Camus cognac.

• Before the iconic restaurant’s last revamp, the team traveled around the U.S., sampling the best of the best steak restaurants and then bringing their experience back to Hong Kong.

• Channeling American dining tradition, the portions are enormous, so plan accordingly.

• The main dining room is more family friendly, so ask the host or hostess for a corner table if you're planning an intimate evening.

• A great value at this Hong Kong steakhouse is the weekend semi-buffet lunch menu, a four-course prix fixe meal with the salad bar. Indulge in lobster bisque with vegetables, your choice of entrée from the charcoal grill and then a delightful dessert buffet.
The Food
• Spectacular towers of seafood are ideal for those dining in a group, so you can taste a bit of everything. Try the steakhouse seafood tower for an eye-popping arrangement of Boston lobster, king crab, abalone, black mussels, scallops and prawns.

• Perhaps the most expensive burger in Hong Kong, the signature beef burger weighs in at 14 ounces — complete with lobster tail, foie gras and French fries — and costs $178.

• When it comes to steaks, it’s hard to go wrong, but the Japanese A5 Hida wagyu has earned a loyal following for its rich, melt-in-your-mouth texture.

• Save room for dessert, as the chocolate fondant is the size of your head — a memorable way to end a decadent dinner experience.
The Drinks
• The wine list spans the globe with 4,000 bottles in the cellar from 380 labels, most of which are sourced from France and the United States.

• As for the wine bar, the gorgeous glass cellar stocks giant three-liter double magnums and six-liter Imperial bottles, which you can try by the glass or carafe.

• For something different on the cocktail list, try the well-balanced Bakers Banana, made with Baker’s Bourbon, Laphroaig, lime juice and a splash of banana liqueur.
