  • Bellpine’s menu celebrates the best of Oregon’s seasonal bounty, focusing on farm-to-table dishes crafted with a modern European twist. Executive chef Pedro Almeida designs dishes that highlight the simplicity and quality of area ingredients, often featuring seafood, wild mushrooms and heirloom vegetables.
  • The menu changes frequently, but highlights might include a hazelnut-crusted Pacific King salmon with yuzu hollandaise or a teriyaki roasted duck served with an Oregon cherry salsa. Each plate is artfully presented, reflecting the restaurant’s attention to both flavor and aesthetics.
  • Named for a type of marine sediment found in the Pacific Northwest, Bellpine follows suit with its design, which has an aquatic feel and a sophisticated twist. Elegant interiors from Roam Interior Design feature an ocean-themed color palette, modern sculptures inspired by coastal tide pools and rock formations, and a textured ceiling designed to emulate the underside of a wild mushroom.
  • The wine list boasts more than 200 labels, leaning heavily on regional varietals from Oregon and Washington wineries. The cocktail menu also showcases local producers with an emphasis on spirits crafted by Pacific Northwest distilleries.

The Chef

  • Bellpine executive chef Pedro Almeida brings more than two decades of culinary experience to The Ritz-Carlton, Portland. The Portugal native’s cooking reflects a deep respect for regional ingredients and a passion for blending classic European techniques with modern Pacific Northwest flavors.
  • Culinary training in France, at Portugal’s only acclaimed Japanese restaurant and at upscale fusion spots in Utah gave Almeida a deep appreciation for sourcing nearby and showcasing each restaurant’s unique terroir. His approach to food emphasizes simplicity and seasonality, creating dishes that allow the natural beauty of ingredients to shine.
  • The chef is no stranger to the luxury hotel game. Prior to joining Bellpine, Almeida helped secure international acclaim for the kitchens of Portugal’s The Ritz-Carlton, Penha Longa Resort.
  • Before his untimely passing in 2024, local talent Lauro Romero served as Bellpine’s chef de cuisine, bringing his visionary approach to Pacific Northwest cuisine influenced by his Mexican heritage. The beloved toque’s contributions to Portland’s culinary scene, including his work at the acclaimed República and Clandestino, remain celebrated to this day.
