The menu at Caprice changes three times a year to mesh with the seasons, as the restaurant is keen on using regional Asian ingredients when appropriate for contemporary French cuisine. Although the menu is French rather than fusion, the kitchen only uses Asian ingredients when they make sense in a French dish. We found seasonal dishes, such as vegetable panache with curry sablé, pumpkin and black truffle dressing; wild salmon with winter root vegetables and Alaskan king crab in a red wine sauce; and a venison filet with cocoa crust, cranberry chutney, cabbage and salsify in poivrade sauce on the menu at the Hong Kong restaurant.
