The service at Caprice is formal, with breadcrumbs swept off your table between courses, as you would expect at a fine French restaurant. The waitstaff wears black ties, waistcoats and trousers, set off with a white shirt. But despite their relatively buttoned-up appearance, the waiters are not overly stuffy and will help guide you through the menu or wine list. They’ll share the occasional joke with you and are on hand to give advice to match your tastes, but they aren’t overbearing. Though the look is French formal, the waitstaff is encouraged to be natural and friendly as much as it is elegant and professional to diners at the Hong Kong restaurant.
