Marike van Beurden is the pastry chef at Caprice. Prior to her position here, she worked at Le Cinq, the celebrated restaurant at Four Seasons Hotel George V in Paris. After leaving another restaurant in Paris, she moved on to work at Caprice (which is located in Four Seasons Hotel Hong Kong), where she’s been the pastry chef since 2010. At the Hong Kong restaurant, she whips up desserts such as the milk tea soufflé — a sweet concoction of caramelized French toast, nougat and bergamot sorbet.
