The sommelier at Caprice is Sebastien Allano, who is originally from Brittany. He has spent the past five years at Caprice, where he is head sommelier on a team of three. The other two sommeliers are Yves Nizan, who like Allano is from Brittany, and Benjamin Bonano, who is from the Languedoc in south-central France. Both Nizan and Bonano arrived at the Four Seasons Hotel Hong Kong restaurant 18 months ago.
