Chef David Bouley, who’s been a fixture in the Manhattan restaurant scene since the 1980s, makes it a habit of stepping out from the kitchen to visit diners’ tables during their meal. Though he did not make an appearance at our inspector’s table during her lunch, he did bid her kindly adieu as she left the Forbes Travel Guide Four-Star restaurant.
