The restaurant is the brainchild of celebrity chef Vineet Bhatia, who is known for unexpected ingredient pairings and creative techniques not typically associated with traditional Indian cooking.

Today, Indego by Vineet continues to surprise diners with its artful presentation, interesting flavors and elevated re-imaginings of classic dishes, offering a refreshed approach that resonates with the tastes of modern-day diners.

While the menu includes a selection of vegetarian dishes, it’s one that will particularly delight meat lovers with its street-style favorites and refined plates inspired by India’s diverse regional cuisines, from the rich flavors of Kashmir in the north to the coastal influences of Kerala in the south.

  • The sophisticated and evocative interior of the Dubai restaurant creates an upscale setting while paying homage to India’s rich cultural heritage. Expect design elements like a striking green lacquered door flanked by elephant sculptures, Nataraja sculptures (depictions of Hindu deity Shiva as a cosmic dancer), vibrant jungle-patterned chairs, framed displays of embroidered juttis (traditional footwear), plush crimson and emerald seating, lacquered timber screens, glossy black-and-white checkered floors, mirrored panels and a glamorous cocktail bar under a feather chandelier.
  • Begin with flavorful appetizers such as the Maharashtrian thecha chutney chicken tikka (skewers) and juicy minced lamb seekh kebabs with coriander feta chutney, before moving onto innovative mains such as chicken maharani (tandoori chicken in a lentil marinade) and kaapi wagyu (Arabica coffee-infused wagyu escalopes).
  • Seafood lovers will be delighted with dishes like the honey-mustard, charcoal-smoked Scottish salmon, Keralan crab cake with a khandvi crab roll, and grilled lobster with curry leaf and chilli-ginger marinade, served with broccoli khichdi, dried broccoli florets and cacao dust.
  • If you’re celebrating a special occasion, the nine-course set menu is an excellent choice to sample dishes like truffle puchka (a bold, truffle-flavored take on the popular street food) and scallop moilee (fennel-crusted scallop served with turmeric moilee and mango-cashew salsa).
  • Save space for desserts such as chocomosa, a gold-crusted marbled dark and white chocolate samosa.
  • The cocktail menu features signature creations inspired by Indian festivals celebrated in various regions around the country, such as House of Saffron (bourbon with cocoa nib vermouth and Campari saffron) and Kapitini (coconut vodka with banana, coffee and hazelnut).
