Carbone brings a dose of old-school New York glamour to Dubai's ever-evolving dining scene, transplanting Major Food Group's celebrated Italian-American institution to the ultra-luxurious Atlantis The Royal on Palm Jumeirah. 

Inspired by the midcentury Manhattan dining rooms that once defined an era, the restaurant pairs theatrical hospitality with a polished sense of nostalgia, where burgundy-tuxedo-clad servers, tableside preparations and a lively atmosphere are as integral to the experience as the food itself. 

The Ken Fulk-designed space leans into the drama, with classic charm that could just as easily summon the Rat Pack as modern celebrity clientele. Signature dishes from the original New York location make the journey to Dubai, including the famed tableside Caesar salad with croutons the size of candy bars and veal Parmesan that takes up a whole plate. And an extensive wine program reinforces the restaurant's special-occasion appeal. The result is a high-energy dining destination that feels equally suited to celebrity spotting and milestone celebrations.

Our Inspector's Highlights

  • Carbone’s cellar features more than 400 labels, including rare vintages, boutique producers and exclusive selections, making it one of Dubai's hot spots for oenophiles.
  • The terrace overlooks the resort's Skyblaze Fountain Show, providing a beautiful backdrop for dinner.
  • Unlike many fine-dining restaurants that quiet down after dinner service, Carbone maintains a lively atmosphere well into the evening, blurring the line between restaurant and social club in true New York fashion.
  • Designed by Ken Fulk in partnership with Bishop Design, the space channels 1950s Manhattan sophistication with leather banquettes, chandeliers, Venetian glass mirrors and jewel-toned seating. A massive jellyfish aquarium stretches across an entire wall of Carbone’s dining room, creating an ever-changing focal point that gives the space some whimsy.
  • Believe the hype about the spicy rigatoni. Carbone’s most famous dish strikes just the right balance with its creamy tomato-vodka sauce flecked with chiles. It douses a shareable platter full of curved pasta tubes.

The Chef

  • Raised in Queens, New York, Mario Carbone built his culinary perspective around the Italian-American dishes and dining traditions that would later define his restaurants.
  • A graduate of the Culinary Institute of America, he honed his craft in acclaimed kitchens, including Café Boulud, Del Posto, Babbo and Lupa, before launching his own ventures.
  • In 2009, Carbone partnered with Rich Torrisi and Jeff Zalaznick to create Major Food Group, the hospitality company behind Carbone, Torrisi, Sadelle's and other globally recognized restaurants.
  • Carbone is credited with elevating classic Italian-American "red sauce" cuisine through meticulous cooking, theatrical service and design-driven dining rooms.
  • What began as a New York restaurant has grown into an international brand with outposts spanning North America, Europe, the Middle East and Asia.
